Here’s a delicious Chocolate Covered Strawberry Pie recipe! It combines the richness of chocolate with the freshness of strawberries, perfect for a special occasion or just a treat.
Ingredients
For the crust:
-
1 1/2 cups chocolate graham cracker crumbs (or regular graham crackers crushed)
-
1/4 cup granulated sugar
-
1/2 cup unsalted butter, melted
-
Pinch of salt (optional)
For the filling:
-
8 oz cream cheese, softened
-
1/2 cup powdered sugar
-
1/2 cup heavy cream
-
1/2 cup milk
-
1 tsp vanilla extract
-
1 1/2 cups whipped topping (like Cool Whip or homemade whipped cream)
-
1/2 cup chocolate chips (semi-sweet or milk chocolate)
For the chocolate ganache topping:
-
1/2 cup heavy cream
-
1 cup semi-sweet chocolate chips
For the strawberry topping:
-
1 lb fresh strawberries, hulled and sliced
-
2 tbsp granulated sugar (optional, depending on how sweet you want the strawberries)
Directions
1. Prepare the crust:
-
Preheat the oven to 350°F (175°C).
-
In a mixing bowl, combine the chocolate graham cracker crumbs, sugar, and a pinch of salt (if using).
-
Add the melted butter and stir until everything is well combined, and the crumbs are coated in butter.
-
Press this mixture into the bottom of a 9-inch pie pan, making sure to spread it evenly along the sides and base. Use the back of a spoon or your fingers to press it down firmly.
-
Bake for 10 minutes. Let it cool completely on a wire rack while you prepare the filling.
2. Prepare the filling:
-
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
-
Add in the powdered sugar, heavy cream, milk, and vanilla extract, then continue to beat until the mixture is smooth and creamy.
-
Gently fold in the whipped topping (or homemade whipped cream) until everything is well incorporated.
-
Spoon this filling into the cooled crust, spreading it evenly with a spatula.
3. Make the chocolate ganache:
-
In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer (don’t bring it to a boil).
-
Remove from heat and immediately add the chocolate chips. Stir until the chocolate is completely melted and smooth.
-
Let the ganache cool slightly before drizzling it over the pie. You want it to thicken a little, but still be pourable. Drizzle or spread the ganache over the pie filling, covering the top.
4. Prepare the strawberry topping:
-
In a separate bowl, toss the sliced strawberries with sugar (if using) to coat them evenly. This will help release some of the juices and make them more flavorful.
-
Arrange the sweetened strawberries on top of the pie, covering the chocolate ganache layer. You can make a decorative pattern, or just scatter them randomly, depending on your preference.
5. Chill and serve:
-
Refrigerate the pie for at least 4 hours, or preferably overnight, to allow it to set and firm up.
-
Once chilled, slice and serve! Enjoy the combination of creamy chocolate and fresh strawberries in every bite.
Tips & Variations
-
Crust variations: If you don’t have chocolate graham crackers, regular graham crackers or Oreo cookies (crushed) work well for the crust too.
-
For extra richness, you can add a little bit of chocolate syrup between the filling and ganache layers.
-
You can also drizzle extra ganache over the top of the strawberries for even more chocolate flavor.
